At F.A.B., Inc., quality must be synonymous with our brands. As the saying
goes, "you can only expect what you inspect." Quality is measured
and maintained by product cuttings held in the updated F.A.B., Inc. test kitchen,
yearly audits of vendor production facilities and updates of products with current
innovations. The Quality Assurance department conducts product cuttings
to determine if the products comply with yearly updated specifications. These
are completed on a regular basis with the participation of the Procurement and
Member Services departments, as well as the vendors. All cuttings occur in our test kitchen, at vendor plants and/or member locations.
The F.A.B., Inc. Quality Assurance Department Provides:
- The development and maintainenance of quality control
programs with our suppliers
- Ensuring the food safety of all products
- Ensuring adherence to F.A.B., Inc. specifications
- Management of all Supplier Agreements and certificates of insurance
- Trademark protection of F.A.B.,Inc. Brands.
- Food safety training.

Product specifications are required to communicate our food quality and safety
expectations to our vendors and these specifications are referenced in our supplier
agreements which hold the vendor accountable for losses in sales and actual
product costs in the event of a confirmed defect in the product.
About Gary Dixon, Director, Quality Assurance
Gary graduated from Clemson University in 1974 with a BS in Food Science and received his MS in Human Nutrition in 1976. He has been a professional member of the Institute of Food Technologist for over 30 years and holds certifications from the American Society for Quality in Quality Auditing and HACCP. Gary is also a Servsafe instructor.
Gary has been with FAB since 2003 and has been instrumental in redesigning the brands (Restaurant’s Pride, Orefresco, etc.) and developing specifications and food safety standards. He started his career as an Environmental Chemist and moved on to “hands on” quality control in the manufacturing of canned dairy and meat products with the Milnot Company in Litchfield, IL. Prior to coming to FAB, Gary was Director of Quality Assurance for Denny’s for over 10 years and consulted to the food manufacturing industry.
